It’s a cliche that Tonks owns - breakfast is the most important meal of the day. He’s spent years researching breakfast to make sure you get what you need to start your day. He works on the premise that breakfast is the last meal that you eat when you leave a hotel and he wants that final memory to conjure up the wonderful taste of that departure.

Tonks borrowed this recipe from his favourite breakfast bar in Madison Square Gardens on the Lower East Side and he’s imported an American waffle iron to re-create that New York fabulousness. There’s also the à la carte breakfast menu of eggs galore, smoked salmon and a stacked bacon sandwich to stop all conversation.
